Summary

This is an abstract from the session entitled "New Avenues in the Study of Plant Remains from Historical Sites" , at the 2022 annual meeting of the Society for Historical Archaeology.

Chinese cuisine is complex, with multiple and overlapping principles related to meal planning, ingredients, cooking procedures, and dining customs. In addition, plant foods are selected and prepared to maintain balance in the body and promote good health. A review of plant remains from Chinese diaspora sites in the western United States examines how they could reflect healthful dishes and revitalizing soups and teas. Chinese cooks used these preparations to sustain the well-being of the diaspora community in the face of often harsh living conditions and anti-Chinese discrimination.
